I’m almost embarrassed to call this a recipe, but sometimes that’s exactly the type of inspiration we need. Three ingredients and three steps to a delicious side dish.
This is one of the few vegetables that I can guarantee that Harrison will devour. Most weeks, I’ll cook up one sweet potato for him, and heat up a toddler-portion size for him at dinner throughout the week.
Cinnamon Roasted Sweet Potatoes
Servings 4
Ingredients
- 2-3 large sweet potaotes peeled and cubed
- 1-2 tbsp olive oil
- cinnamon
Instructions
- Preheat oven to 425*
- Toss cubed sweet potatoes in olive oil until coated, and spread on a foil lined baking sheet
- Sprinkle with cinnamon turning potatoes until lightly coated on all sides
- Bake for 27-35 minutes, Flip potatoes every 10-15 minutes
