During long work days, I love dumping all of the dinner ingredients into a crockpot and coming home to a completely finished dinner in the evening. Not to mention that when you get tired of carne asada tacos, add the meat to a quesadilla, or chili, or hamburger bun, and you’ve got a whole new meal.
Carne Asada
Ingredients
- 2 lb skirt steak
- 1 lime juiced
- 2 t cumin
- 1 t paprika
- 7 cloves garlic minced
- 1/4 c cilantro roughly chopped
- 2 t oregano
- 1 1/2 t salt
- 1/2 t pepper
Instructions
- Season steak with salt & pepper
- In a small bowl, mix together juice, cumin, paprika, garlic, oregano. Rub on steak
- Put steak in crockpot, sprinkle cilantro on top
- Cook 6-8 hours on low. Slice and serve as soft tacos. Garnish with monterrey jack cheese, sour cream, and avocado
