Today, we’re sharing our go-to summer lunches.
Let me see, my go-to summer lunches for kids are: peanut butter and jelly sandwiches, Easy mac, grilled cheese, and cheese quesadilla. Ha. Doesn’t that sound like your childhood, too?
My adult go-to summer lunches look a little bit different than the kids, though.
Option 1: In the summer, I usually pick up at least one bag of pre-packaged salad a week to have on hand. I like a spring mix or a spring mix & baby spinach. Half of the time, I also pick up a pack of the already hard-boiled eggs to stick in my fridge as well, because I’m unbelievably lazy when it comes to having to pre-make anything for lunches.
Then, I throw together a quick salad as a lunch: lettuce dumped from bag, hard boiled egg, sunflower seeds, dried cranberries, poppyseed dressing. Mix and enjoy.
Oh! I almost forgot. Have you all tried these croutons from Trader Joe’s?? They are SO GOOD. Throw some of those on your salad, too.
Option 2: Stick that frozen food in the toaster oven. These little pockets of puff pastry stuffed with feta and spinach are delightful.
Stick those things in the toaster oven while you’re making the kids lunches, then you don’t have to starve while your kids enjoy their lunches.
Option 3: The snacky, snacky lunch. Where you graze your fridge and pantry until you feel full. Leftover sliced cheese and turkey? That’s pretty much a charceuterie board with some crackers. Blueberries that are starting to look a little squishy? There’s your fruit. Stick a slice of bread in the toaster, and it’s practically a well-balanced meal.
Option 4: I still love an avocado toast. Filling and fast to prepare.
Option 5: The old caprese summer salad. In the heat of the summer, there’s nothing more delicious than fresh mozzarella, tomatoes, and basil drizzled with some olive oil and balsamic vinegar and maybe a touch of salt. It literally tastes like summer.
Option 6: Eat what the kids eat. If I’m making the boys a peanut butter & jelly or grilled cheese, I’m usually also having a PB&J or grilled cheese. I mean, it’s still nostalgic and delicious for me.
Option 7: Eat what the kids don’t eat. Potentially a riskier move, but if you’re re-heating leftovers for the kids lunches, at 1 & 4, they’re usually not eating all or even most of that reheated food. Easy, quick adult lunch straight from the rejects of your kids. Ha.
I usually opt in to Option 6 & 7. 🙂
I tend to eat a lot of salads for lunch too in the summer; I often pick up some of the precooked, grilled chicken strips or already peeled/cooked shrimp to sprinkle on top.
Oh cooked shrimp is a great idea!
